I always love the “customize to your liking” concept for restaurants, and Vinason executes it wonderfully. Calling it Pho-potle is also clever! The quality backs it up too. Flavorful broths that stay true to the traditional recipes. The meats are tender and fresh. It is impressive how they keep the flavors in the broth so dialed in & consistent given the fast-casual format. The oxtails & wagyu were both of high quality - you could taste the difference. I’m picky with Bún Bò Huế as our family restaurant used to specialize in it - and it was very, very good here at Vinason. The topping & sauce bar was great, as well. So impressed to find pickled garlic & onions here! Truly authentic to the variety of pho’s in Vietnam. The customer service was also exemplary - I appreciated the attention the young man behind the bar gave us while walking us through the broths & different meat options. It’s a thoughtful balance between novelty & authenticity here. Everyone should go give it a try. Perhaps the biggest compliment of all - my Mum loved the pho (and she was a pho chef).

Very delicious. You get to pick what type of soup you want and select the meat. The peach lemongrass tea was very good the soul and meat tender and melt in your mouth. I would like if they had more noodles but still over all very good

This place is sooooo good. The bun bo hue broth is amazing, the Saigon pho is so good. Everything about this place is just perfect. Plenty of parking, lots of seatings. Perfect for large group also

I was excited to try this place, out of the three broth they have you try, I went with the Hai noi broth, it was good with flavor. I picked steak and tendons for protein and that was it. What I didn't expect was the price tag, $26, portion was small. I could have went down the street to Pho T&L and got a combo with more meat, tripe and tendons for $16. I asked a couple that was sharing a bowl how much they paid? they said $30, wow. I love the concept of getting to build your own bowl of pho, but I dont like feeling scammed in the end. And whats sup with the paper bowls? Definitely one and done.

Saw this place on TikTok, had to try it out. Kent location is in a stripmall and the closed one to me. Tam, sweet young lady, I belive she said was the manager let me try a spicy noodle dish they were working on. It was also very good. I got bun bo hue, completely different kind of broth compared to "normal" pho, but very tasty. Food was very good, staff very nice. Only complaint was there was lots of high stool seating, Peronsal preference there. Would definitely recommend to others
