I was so hungry that I had to stop and find something to eat. Taking the 15th St NW Auburn exit led me to the brand-new Pho Emerald, and I'm glad it did! The restaurant is clean, well-organized, and nicely decorated. The menu is easy to read, prices are reasonable, and the tables have everything you need. The staff was friendly and quick, making the experience even better. Then came the real highlight: the pho. It arrived quickly, steaming hot, and packed with flavor. The broth was rich, fresh, and absolutely delicious. Every bite was satisfying, and you could tell care and quality went into every detail. Pho Emerald is a great addition to Auburn. Good food, good prices, and great service. Treat yourself and give it a try, you won't regret it! 🍜😊

Pho Emerald is an exceptional pho restaurant with so many different entre options to choose from. The soul of any pho is the broth, and this place clearly nailed it with it's rich and savory flavor. We ordered the Pho Emerald Special, Emerald sizzling plate, fish sauce wings and spring rolls. Clean restaurant with super friendly owner and attentative staff. This is the best pho in the PNW so come check them out!

Pho Emerald delivers a truly satisfying Vietnamese dining experience. The Vietnamese iced coffee with condensed milk stands out immediately—rich, bold, and packing a serious caffeine kick with its deep, lingering bitterness. The Cơm Tấm Sườn Bì Chả (broken rice with grilled pork chop, shredded pork skin, and steamed meatloaf) is a highlight. The pork chop comes out smoky and flavorful with a juicy interior that’s cooked just right, complemented nicely by the traditional sides. The grilled pork sandwich is equally impressive, offering a well-balanced mix of savory, lightly sweet, and tangy notes that come together perfectly in every bite. Portion sizes are spot on—not too heavy, but definitely filling. On top of that, the staff are friendly and attentive, making the overall experience even more enjoyable. Definitely a place worth coming back to.

My wife and I visited Pho Emerald for the first time, and we really enjoyed our experience. The restaurant recently opened and looks beautiful. The food display outside is very inviting and immediately draws you in. Inside, everything is clean, well-organized, and comfortable. The TVs showing news and videos add to a relaxed atmosphere. The staff greeted us warmly, provided the menu right away, and took our order promptly. We ordered the iced Vietnamese coffee and the matcha coconut drink—both were excellent. The Vietnamese coffee tasted authentic with just the right amount of sweetness. I really enjoyed it. My wife liked her matcha drink, especially with the coconut jelly inside. For food, my wife had the vermicelli noodles with Vietnamese sweet fish sauce, which she really enjoyed. I ordered the house special pho with beef rib. The rib was large, the broth was rich and flavorful, and everything tasted great. The owner, Steve, came out to greet us and spent some time chatting with us. He was very friendly and welcoming, which made our experience even more enjoyable. Overall, we like this place and would consider coming back to try more dishes. However, the pricing does feel a bit on the higher side. One small area for improvement would be the Bún bò Huế. It’s one of our favorite dishes, but this version did not include pig blood, and the beef shank was a bit tough and curly, suggesting it may not have been cooked long enough. With more tenderness and traditional preparation, it could be even better. In addition, on a previous visit, we received our food but were not served water or tea, which is something that could be improved in terms of basic table service.
