Sap Sua is a Vietnamese restaurant on East Colfax Avenue in Denver, Colorado, bringing Vietnamese flavors into a contemporary, cross-cultural menu. The restaurant’s approach, as described by diners, pairs familiar Vietnamese ingredients and seasonings with influences from other cuisines rather than sticking to a strictly traditional format. That makes Sap Sua a useful choice for guests curious about Vietnamese food as well as diners looking for distinctive plates to share. You’ll find it at 2550 E Colfax Ave, Denver, CO 80206. Customer feedback is notably strong, with a 4.6-star rating across 655 reviews, though individual preferences about seasoning and portion size can vary.

Reviews point to dishes that show the kitchen’s playful range. The browned-butter egg dish, described by one diner as soft scrambled eggs, is a standout mentioned more than once. Other dishes praised by guests include beef carpaccio or tartare, shrimp cake, spicy cabbage salad, and morning glory confit. These examples suggest a meal built around several different plates and flavors, rather than one main course alone. A reviewer reports that the restaurant recommends ordering two to three plates per person, so it may help to plan both the number of dishes and the budget with that sharing style in mind. Menu offerings can change, so check with the restaurant for current selections.

The experience sounds suited to a relaxed dinner with a friend, a date, or a small group that enjoys tasting a variety of dishes. Guests describe inventive takes on familiar Vietnamese flavors, and several mention cocktails and wine as part of the meal. One reviewer appreciated a sommelier’s vinho verde recommendation, while another noted warm, prompt service. Diners also mention that bar seating may open up for walk-ins, sometimes after a short wait; a reservation may be worth considering if you have a particular time in mind. Reviews are not unanimous about every detail: one guest found the seasoning more assertive than preferred, and another felt some portions could be larger.

Sap Sua serves dinner Monday, Wednesday, Thursday, Friday, and Sunday from 5:00 to 9:30 p.m.; it is closed Tuesday. Saturday hours are 8:00 a.m. to noon. These hours make it possible to plan an evening meal on most days of the week or a Saturday morning visit. If you’re searching for a Vietnamese restaurant in Denver with an inventive, shareable menu, Sap Sua offers a specific point of view grounded in Vietnamese flavors and complemented by cross-cultural influences. Check current hours, availability, and menu details before heading to 2550 E Colfax Avenue, especially if your plans depend on a particular dish or dining time.

Absolutely blown away by this restaurant. I am still savoring every bite of this meal. Everything we order was phenomenal, so it's hatd to rank a favorit. Soft scrambled eggs in brown butter - delicious. Beef carpaccio - delicious. Shrimp cake - delicious. Spicy cabbage salad - delicious. Every item was perfectly balanced - savory and spicy.

We were a party of two that was luckily able to snag a walk-in spot at the bar. We waited roughly 15 minutes for a spot to open up. They recommended 2-3 plates per person, so keep that in mind (and budget!). Food was incredibly delicious, but some items felt like it needed a slightly larger portion size for the price. For example, the pork jowl had 3 pieces and is $26. The soft scrambled egg and charred cabbage were surprising favorites as they took simple ingredients and transformed them into something incredibly delicious. We also ordered a bowl of rice but it didn't come during the first dish. We had to request it after our final dish had come out as we would have expected it to be delivered amongst the first dishes so it can be eaten alongside everything else. The banana pudding is super good, I love the Vietnamese twist to it and it wasn't too sweet. Overall, this was a great meal but I won't be back as the portion size for the price isn't in my budget. If money is not a limiting factor, you'll enjoy this place for the unique flavors.

Finally visited Sap Sua to celebrate 6 months in a new role! The highlight was the Trúng Và Trúng, a browned butter egg dish that the New York Times named one of the best in the US - but everything was just incredible Vietnamese fusion. Beef tartare// thai chili kosho, egg yolk, peanuts, turmeric cracker. The flavors in this were unreal! I do think the chili overpowered a bit, but ultimately this was such a great balance of tangy, sweet, citrus, spice and nuttiness. Hamachi collar// They had a hamachi belly special that just ran out 🥲 so I got the next best thing. With coconut caramel, pickled jalapeño, grilled lime, and fluffy rice. Very meaty and lush! Ibérico pork secreto// grilled with lemongrass, apples, and perilla. So herbaceous and the pork was cooked perfectly medium (yes that’s a thing, nice n pink 😋) Pho-spiced tiramisu with lime curd // So fluffy and loaded with those earthy warm spices! Beautiful presentation too. Sap Sua actually has a pop-up bakery on Saturdays as well! So you know we had to go back in for round 2. The coconut-mango sticky rice danish was so unique, creamy, tangy, and well layered! We also had a lamb curry hand pie and a banana cream bun. Overall stellar bakery with unique flavor profiles - worth the hype to check out Denver!

Fantastic dining experience. Every dish was unique and delicious, putting their own on familiar Vietnamese flavors and ingredients. The seasoning was a little too aggressive for me, but still excellent. Cocktails and wines were very good too. Loved the sommelier’s recommendation of a vinho verde when I asked for a dry white.

Had a gift card from a few years ago (still good via Toast!) and finally got a reservation. Came early and immediately noticed the warm and prompt service. The fusion of Vietnamese flavors mixed into Euro favorites vibed very well together. Dishes that I would reorder 100%: morning glory confi with chili crisp (amazing synergy) , trung va trung (sooo rich we took home half to put on sourdough), fried chicken sandwich (done just right), and the pho spiced tiramisu. The grilled iberico pork and charred cabbage were good too and worth a try. All in all, I can see why Sap Sua has earned so much praise and continues “to strive to be better than yesterday”. Well done!
