The barbacoa is not shredded. It is lumpy like the actual cheeks and you'll have to shred yourself. The flour tortillas are partially cooked. The pork tamales are hand made and taste like they are using a pig head according to cartilage and fat content. Very authentic. The 3 young men are very happy to be there and help you. I'm 60 y.o. and I can not tell you the memories I have of waking into a Molino this place brings back to me. I've not had their pan dulce but, the rest is VERY delicious and worth the wait. We went here 8 weeks ago because we made the long trek to ger Rubens Tamales and they were closed, again. Try this place it will not disappoint.
