The Paper Bridge (Bún Chả Cầu Giấy) is a Vietnamese restaurant at 828 SE Ash St in Portland, Oregon, for diners curious about Northern Vietnamese cooking and flavors beyond the pho they may already know. Customer feedback describes a menu with a distinctive, herb-forward character, alongside familiar favorites and dishes that invite guests to explore. The restaurant has a 4.5-star rating across 539 reviews, reflecting many visits as well as a range of opinions. Its limited daytime schedule makes checking the hours before heading over especially useful.

One popular choice mentioned by customers is noodles with pork, a hearty combination that brings the noodles and pork together with a flavorful sauce. A reviewer also enjoyed bread with the sauce, while another praised the sautéed morning glory for its garlicky, wok-charred flavor. These comments offer a glimpse of the menu’s range, from satisfying noodle dishes to vegetables prepared with bold seasoning. If Northern Vietnamese food is new to you, the menu may offer an approachable way to try something beyond the dishes you already recognize; if you know the cuisine, its regional focus may be part of the appeal.

The setting is a memorable part of the experience described by guests. Reviewers mention an alleyway-and-street-scene design, thoughtful decorations, and an atmosphere that feels carefully created. One diner appreciated that servers explained popular items and helped guide the order, which can be useful when deciding what to try. Taken together, the room and service make The Paper Bridge a consideration for a relaxed meal with friends, a small group, or anyone who enjoys a restaurant with a strong sense of place.

Experiences with timing and food are not identical for everyone. While some guests describe the flavors and overall visit very positively, one review reported waiting 40 to 50 minutes for a main dish, and another diner felt disappointed. That range is worth keeping in mind, particularly if you have limited time; arriving without a tight schedule may make for a more comfortable visit. The restaurant is open from 10:30 a.m. to 2 p.m. Monday, Thursday, Friday, Saturday, and Sunday, and is closed Tuesday and Wednesday. For Vietnamese food in Portland with a Northern Vietnamese focus, The Paper Bridge offers a distinctive atmosphere and dishes that customers describe with both enthusiasm and candid criticism.

There's much to admire at The Paper Bridge, a rare spot in Portland dedicated to the nuanced, herb-forward cooking of Northern Vietnam. On a recent visit, the kitchen delivered dish after dish of genuine character. The Sautéed Morning Glory arrived garlicky and wok-charred, still clinging to its crisp snap. The clams swam in a fragrant, peppery broth that begged to be sopped up with the impossibly long, airy fritter (quẩy) —a textural triumph. The Mai Dich Bun Cá, a turmeric-tinted noodle soup from Hanoi's outskirts, was a revelation: light, tangy, and brimming with fresh dill. Even the Vegan Roll, often an afterthought elsewhere, sang with mint and crunchy vegetables. And the Vietnamese Banana Cake, warm and caramelized, provided a gentle, sweet finale. So why only four stars? The service. Our wait person was noticeably short and impatient-rushing orders, brushing off questions, and making the meal feel transactional rather than welcoming. In a city and cuisine that thrive on hospitality, this dissonance stung. The food is worthy of a pilgrimage. Just brace yourself for a front-of-house experience that doesn't match the kitchen's warmth.

The alleyway + street scene setup is genuinely gorgeous. You walk in and you can tell the owner poured their heart into building this vibe. Instant immersion. Then you sit down. ⏳ Food took 40–50 minutes. For just the main. No drinks, no apps—just you and your thoughts. Unless you're ordering rounds of cocktails, and small dishes, you're in for a long, still wait. 🪑 The chair audibly questioned its existence every time I moved. I spent the entire meal negotiating trust with a wooden creak. Genuinely wasn’t sure if it will last through dinner. 🍛 Food was good. Like, actually good. But that good? For an hour wait and a survival trial? Debatable. 🍢 The skewers came with sauce that was aggressively salty. Like, 15/10. Not sure if that was intentional. 🍜 The pho, though? Actually great. Broth was solid, noodles had personality.

Very nice flavors, I’m not very knowledgeable in vietnamese food other than pho. I order the noddles with pork since that’s the most popular dish and the bread. The bread with the sauce is really good. I liked my dish and I like pork but I thought it was too much pork, the noddles are really good. I recommend it.
