About
What The Pho is listed on FindALoco in Denver, CO with address, phone, website, hours, and map location. Common services and related keywords include Vietnamese Restaurant.
What The Pho is a Vietnamese restaurant at 1600 Champa St #110 in Denver, CO, serving guests looking for a bowl of pho in downtown Denver. Its location can take a little finding: customer reviews say the restaurant is tucked around a corner and describe an entrance that may not be immediately obvious. That unusual setting is part of the experience, so allow a moment to look for the sign and follow the directions at the building rather than expecting a prominent street-front entrance.
Pho is the central draw, with customer reviews highlighting hot bowls, flavorful broth, and portions they found satisfying. One diner recommends the shrimp pho, appreciating its broth and serving size; another calls out order number 16 as delicious, with layers of flavor. These are individual customer impressions rather than a fixed description of every bowl, but they offer a useful sense of what guests come for: a comforting Vietnamese noodle soup and a meal that can feel filling without requiring a special occasion. If you are choosing a spot for a pho craving, What The Pho gives you a downtown Denver option.
The menu also has details beyond pho that reviewers mention, including dumplings and jackfruit boba. One guest was pleasantly surprised by the jackfruit boba’s resemblance to iced coffee, while another appreciated the dumplings. Beer is also mentioned in a review, making it an option for guests who want a drink with their meal. Since reviews reflect individual visits and preferences, it is best to check with the restaurant about current offerings if you have a particular dish or drink in mind.
Guests describe the service as quick and friendly, and some say they have returned for multiple visits. Reviews also mention that it can be possible to get a table without a long wait, though timing will naturally depend on the day and the rush. The setting may feel a little unconventional because of the tucked-away entrance, but that can suit diners who are happy to explore a downtown location in exchange for a casual bowl of pho. It may work for a quick meal, a relaxed visit with family or friends, or anyone nearby who wants Vietnamese food.
What The Pho is open daily, Monday through Sunday, from 10:00 a.m. to 9:00 p.m., at 1600 Champa St #110, Denver, CO 80202. For a Denver restaurant search centered on Vietnamese pho, shrimp pho, or a convenient downtown meal, this is a practical place to consider. Look for the sign and check the entrance carefully, then settle in for the dish that brought you there.

I didn’t have high hopes for a pho restaurant off of 16th Street and unfortunately my worries were proven to be true. First off, the restaurant is located in an interesting place. Once you see the sign, walk south of it for a few steps, walk into the door on your left, and you’ll see another door to go into the restaurant. The bathroom is located in the hallway prior to entering the restaurant and requires a gross key from the restaurant. The food itself is just ok. The pork egg rolls are tasty but a bit overpriced. The pho was very disappointing. I understand that due to the location and rent price that they have to charge more but the amount of meat was actually funny, the broth was not that tasty, and the noodles did not taste fresh. Service was alright. The location is pretty large and is a good place to bring a non-picky eater for business lunch or something.
My sister was craving pho in 90 degree weather so we decided to make a stop here. The restaurant is a little awkwardly located but it adds to the atmosphere of the environment. We ordered a jack fruit boba and I was pleasantly surprised at how much it tased like an iced coffee!! I thought the dumplings were different but delicious nonetheless! I will definitely be back again!!
This place is hiding around the corner on the building. Be sure to find, the PHO will have you saying what the PHOOOO. Will be back got the number 16. Delicious, hot, the flavors have layers and service was so fast, delicious, and friendly. Beers and waters hit the table in 2 minutes in a big rush, from being sat at our own choosing in the restaurant.
I’ve dined here a few times and it’s always been a good experience. The food is amazing and the service always great. It doesn’t typically take long to get a table. I definitely recommend.
Really enjoyed the shrimp pho with good portion sizing and a yummy broth. The service was quick and the did was delicious.
