I have said this since Sucré opened, having posted this establishment's most glowing review all those years ago; I have said this since I first bit into one of Brenda's incandescent kouign amanns; and l have said this to Brenda's time and again: she is an absolute maestro of viennoiserie and the kouign amann is her magnum opus. Every French baker is only as good as his or her KA, and Brenda's would make most bakers in Brittany and Lyon a little nervous. Unlike flaky or bready kouign amanns, Sucré's bleed butter, even post bake. Biting into the gooey, rich core is to experience superlative pastry mastery. The scraps tightly packed into the center, pre-bake, are are simple touch of genius that adds bulk, richness, and dripping, melty butter that has somehow survived the bake without fully integrating into the dough. And if your palate is not coated with premium butter, is it an authentic French experience, really? Brenda's is arguably singularly the best in Florida and the entire South, and could vie for best in the country; on par with the likes of Arsicault. She puts Domnic Ansel's DKA to utter shame; and, in most respects, blows the likes of Bachour and Yann Couvreur out of the water. I have brought food connoisseurs from Paris, Tokyo and San Francisco and they all raved about the Almond Croissant being one of the finest thev have ever had, in any continent. I have lived in 5 countries and have visited easily 5,000 bakeries in 50 countries, and this one is up there. When it comes to viennoiserie, Sucré is easilv the best and closest to Lyon-quality. Rustic, aggressively laminated, lightly glazed, caramelized butter-forward, dried and crispier exteriors; wonderfully Breton in nature. And the bread puddings? Densely-laminated, caramelized butter, deeply saturated, custard seeped throughout, sugar lacquer, compressed tightly. The Banana Whiskey giving sticky-toffee-pudding vibes with heavy glaze penetration. The Bailey’s Pecan even richer from the nut load and substantial butter carryover. The notes of whiskey in the banana, and the luscious luxury of the Bailey's lathering the pecans... could get [and might have gotten] a grown man to fall down to his knees. Sucré is a standard-setter. Next up, the deluxe kouign amann, flan cake, and any new, innovative, masterful concoctions Brenda's breathes to life.
